Others argue that you must use water so cold that it resembles a block of ice. Many people suggest you should use chopsticks to whip air into the batter, but not too much, and then dip and fry your food soon away.
The directions become so complicated that it reminds me of when I thought I’d try creating exquisite French macarons at home. There are so many “secrets” to success. So many blunders.
All of this to say, when I want really, really delicious tempura, I go to a restaurant.
Sometimes all you want is something homemade. As I previously stated, you can definitely produce nice tempura at home. Even if it lacks the impossibly crispy light texture of tempura created by an artisan tempura chef, it will taste delicious.
However, as I previously stated, the techniques for producing decent tempura batter at home can be fairly scary. And why bother following a finicky recipe if I already know I’m going to set my expectations a little lower for homemade tempura vs. restaurant tempura? Indeed, why bother with deep frying at all?
Adapting Air fryer Tempura Shrimp Recipe
The only difficult aspect of creating tempura with an air fryer is determining the batter. If you’re experienced with air fryer cooking, you’ll know that battered dishes don’t usually turn out nicely.
When the air starts to circulate, a thin batter will fly right off the food or trickle right down to the bottom of the basket. That, or the batter causes all of your food to adhere to the basket or to each other.
Air fryers are better for breaded dishes rather than battered foods.
Here’s the tempura batter split out with extra flour on the side. Air-fried battered and breaded shrimp I overstuffed my basket. Do not do this.
Another suggestion is to thinly slice your root vegetables! Aim for a thickness of less than 1/4 inch, or your vegetables will be overcooked by the time your batter is done frying.
Preparing Shrimp for Tempura
One thing I feel compelled to add is that shrimp tempura is always served straight. But how is that possible when shrimp curl up when cooked? You score the underside of the shrimp across as part of the shrimp preparation.
The shrimp are then straightened out with your fingers before frying. It’s a minor extra step that just takes a few minutes. I always do that, but if you don’t care about the presentation, you can skip it. It’ll be delicious.

What Fillings Should You Use for Tempura?
One of the most typical tempura fillings for protein is definitely shrimp. (Fillings? Meats? I’m not sure what to call tempura’s insides.) You could also use other seafood, such as squid.
Root vegetables, such as sweet potato, carrot, and lotus root, are popular. You can also use different squashes, such as kabocha. Other good options are bell pepper, broccoli, zucchini, and shiitake mushrooms.

- Cook the shrimp in the air fryer for 5-6 minutes, flipping halfway through.
Make sure to choose high-quality frozen foods and to read the labels. Choose foods with good, complete ingredient labels and avoid those with artificial tastes or colours.
To ensure consistent cooking and avoid soggy batter, do not stack the shrimp in the air fryer. You can easily make multiple batches because it is so simple and quick to produce.
